The traditional food for New Year Pork and Sauerkraut begun since 1600s. People usually prepare this in the first day of the year. Pennsylvania Ducth tradition still in practice in January 1st and still in many peoples beliefs of its power in giving luck throughout the year.

Peole believe that eating pork in new year makes you fat and like a hog, developing fats symbolizes prosperous new year. The color of the cabbage which is green symbolizes the money, more money for the rest of the year. The pig’s feet always point forward in the ground which symbolizes leading the way to the year.

The basic ingredients for the Pork & Sauerkraut recipe involves lean pork roast, black pepper, applesauce, brown sugar, sauerkraut, water and some cabbage. Mixing this ingrediens with some other spices will give the pork taste and flavor. It is cook in low heat for about 5 hours depending to the ratio of weight of the pork you are cooking.
