Easy Corned Beef Recipes, Saturday is St. Patrick’s Day, which means the usual easy-peasy family meal just won’t do. It’s time for corned beef and cabbage, and something a more little frivolous and fun.

There are millions of Americans of Irish descent and nearly just as many variations on classic Irish dishes to celebrate St. Patrick’s Day. Irish Stew
Ingredients: 2 pounds of beef, cut in one inch cues, 3 Tablespoons of olive oil, 14 ounces of beef broth, canned, 1 cup water, 2 TBL spoons parsley (chopped), 1 ½ tsp. salt, ¼ tsp white pepper, 1 bay leaf, 6 medium carrots, 6 medium onions, cut in thirds, ½ cup frozen peas, thawed. Parmesan cheese. Potatoes -small red or your preference.

Brown beef in olive oil. Add beef broth, water, parsley, salt and bay leaf. Cover and simmer one hour. Stir occasionally. Add onions and carrots. Simmer 30 more minutes.

Now prepare potatoes. Place the stew in the oven (in oven proof dish). Spoon the small, sliced potatoes over the stew, sprinkle with peas and Parmesan (to taste). Run under broiler on low heat until potatoes are lightly browned. It’s delicious. Best yet? The house smells fabulous!

Corned Beef
Corned beef is so simple. Honestly, Costco has some great corned beef with a spice packet enclosed. I also jazz it up with spices we like (bay leaves, etc.) I put the corned beef on the stove in a pot of water with carrots, cabbage, onions and potatoes. I cook it on low all day. You can do the same in a Crockpot if you’re not home. You want to put potatoes in longer than the cabbage and carrots. If you don’t want mushy carrots wait until your last half hour. Put in the cabbage in the beginning. I have made extra cabbage using juices from the main batch. I have also cooked all this in the oven in a tray with about an inch of water in the bottom of the tray. Delicious!
