Cheeseburger In Paradise, Derek, Amy and the grandchildren invited us to spend a few weeks with them one summer in Maui. It was to be a summer of endless fun, exploring and sightseeing. We just didn’t realize they’d decided on a summer of fun, sightseeing, exploring and reduced carbohydrate dining.
It was fun in the beginning – all sorts of exotic fruits, with smoothies made of fresh and frozen fruits, crushed ice and healthy juices. We dined on broiled chicken, fish, steak and shrimp – just no bread. A juicy hamburger was out of the question, and French fries were considered a mortal sin.
Since we were guests, and grandparents, the rules didn’t apply to us. Now tell me, could you eat a delicious hamburger on a poppy seed bun, with French fries, while hungry grandchildren watched? Of course you couldn’t. So, Pat and I went along with the healthy regimen, so not to tempt or offend the kids.
Now, when you’ve been accustomed to carbohydrate intake four times a day, with snacks, change does not come easy. I’d find myself waking at all hours, just lying there thinking about a slice of white bread and butter.
