National Cupcake Week, Barefoot Wine is encouraging readers of The Weekend to dust off their rolling pins and don a pinny in support of National Cupcake Week. The award-winning brand has created a wine infused recipe to inspire adults to bake and share with friends and family as part of celebrations from September 17 to 23. Barefoot Moscato has been carefully selected to enhance the flavours in the recipe, for an extra touch serve cupcakes with a glass of wine.
Little Sips Cupcakes
Ingredients for cupcakes: ¼ cup Barefoot Moscato, 1 ½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt, 1 cup granulated sugar, 4oz butter, 2 large eggs, ¼ cup milk.
Ingredients for Frosting: 2 teaspoons Barefoot Moscato, 8oz softened mascarpone cheese, 16oz icing sugar, 1 teaspoon vanilla extract, shaved chocolate (garnish).
Preheat oven to 350F. In a medium bowl, whisk flour, baking powder and salt; set aside. In a large bowl with electric mixer on medium-high, beat sugar and butter until light and fluffy, about two minutes. Add eggs, Barefoot Moscato and milk until just combined. Add dry ingredients; mix until smooth and fluffy. Divide batter evenly into 24 mini cupcake tins. Bake for 15 minutes or until toothpick comes out clean. Cool for five minutes in pan: remove from pan and cool on wire rack.
In a small bowl with electric mixer on high, beat mascarpone cheese and Barefoot Moscato wine just until smooth. Gradually beat in confectioners’ sugar and vanilla until blended. Frost each cupcake with a small amount of frosting. Garnish with shaved chocolate.
