Green Bean Recipes, Serves: 12 / Preparation time: 15 minutes / Total time: 45 minutes, 11/2 pounds green beans, trimmed , 3 tablespoons olive oil, divided , 2 large fennel bulbs, trimmed and cut into 1/2-inch-thick wedges; reserve fronds , 1 teaspoon kosher salt , 1 teaspoon fresh ground black pepper , 1/3 cup fresh orange juice , 1/3 cup sliced almonds, lightly toasted, optional , Zest of 1 orange
Preheat the oven to 400 degrees. In a medium bowl, toss the green beans with 11/2 tablespoons of olive oil. On a rimmed baking sheet, toss the fennel wedges with remaining 11/2 tablespoons of oil and season with salt and pepper. Arrange in a single layer and roast 15 minutes. Turn the fennel over and add the green beans to the baking sheet. Roast until the green beans are crisp-tender, about 12 minutes. Remove from the oven. Place the mixture on a platter and drizzle with the orange juice and sprinkle with almonds and orange zest. Garnish with reserved fennel fronds if desired.
