Fresh Cranberry Sauce

Fresh Cranberry Sauce, Many of us grew up with the cranberry sauce from the can a traditional part of the Thanksgiving dinner table. If so you might never think of making your own cranberry sauce because you think it must be very time consuming and difficult to do. Nothing could be further from the truth. Once you see how quick and easy it is to do, and how much better it can taste, you will want to consider making your own cranberry relish this year.

This recipe from Julie Geary of Gloucester’s Classic Cooks Catering uses dried cranberries but fresh cranberries are readily available this time of year and they cook very quickly. All you have to do is mix the right ingredients with them and simmer for twenty to thirty minutes, instead of the 10 minutes with the dried cranberries. Do not forget that you can make this sauce the night before or even several days ahead, which will give you a few less things to worry about on Thanksgiving day.

Another thing to consider about cooking with the whole cranberry are the health benefits, which are almost too numerous to list. Researchers are finding that the cranberry is a very healthy fruit, and cooking with the fresh cranberry is best to maximize the health benefits, not to mention the taste. For example, among the fruits and vegetables richest in health-promoting antioxidants, cranberries rank at the top of the list. While familiar nutrients like vitamin C and fiber play a very important role in cranberry’s health benefits, recently it’s the wide array of phytonutrients in fresh cranberries that has attracted special attention from health researchers.

Homemade Cranberry Relish

1 cup dried cranberries

1/2 cup raspberries

1/4 cup orange juice

1 tablespoon brown sugar

1. Add cranberries, raspberries, orange juice and brown sugar together into a sauce pan.

2. Place over medium heat and simmer for about 10 minutes.

Remove and refrigerate until ready to use.
